Abšmalcane mahune – boiled green beans with fried breadcrumbs

Less is more! Herein lies the appeal of this somewhat forgotten recipe that would leave no gourmand wanting.

 The richness of the combined flavours extracted from a few simple ingredients is the result that will leave even those most demanding speechless. Just be careful to pick green beans that are young, fresh and wide, and not stringy.

 

Ingredients for 4-6 people:

900 g fresh green beans           

150 g butter

100 ml olive or vegetable oil

100 g smoked bacon

3 cloves of garlic

100 g breadcrumbs

Salt


Preparation:

Cut off the ends of the green beans and halve them. Cut smoked bacon and garlic into thin slices. Add green beans to boiling water, salt and cook them for 10 to 15 minutes. In the meantime, melt butter in a pan over a flame, pour in olive oil and briefly fry smoked bacon slices. Then add sliced garlic and fry for about 20 seconds. Next, add breadcrumbs and briefly fry everything together while constantly stirring. Remove from the flame. When cooked, drain the green beans and move them to a serving plate. Cover them with the fried mixture of bacon, garlic and breadcrumbs, salt to taste and serve hot.

 

Finishing variation No. 2

Drain the cooked green beans and place them in a pan over the fried breadcrumbs and bacon, stir and serve still hot.
